Crepes or Blini? French or Russian?

Most people know what crepes are - super delicious. Well we have them in Russia too and they are called Blini. You can read about the difference but all in all they are the same. I grew up with eating blinis all the time, sometimes with caviar (yes I'm Russian remember?), sometimes with sour cream, and sometimes we even put a   meat mixture inside. They make a great breakfast, and even lunch and dinner
1 1/2 cup flour, white or wheat
2 cups of milk
2 eggs
1/4 tsp salt
1 tsp sugar
butter for greasing the pan

Mix all the ingredients together (it will look liquidy). Heat up a small pan, when hot enough (if you drop water on it, it will sizzle) take a stick of butter and lightly grease the pan. Using a 1/2 cup measuring cup pour  the batter into the pan and move it around so the batter coats the whole pan. Cook the crepe until the bottom is golden, then flip it and cook on the other side. Repeat with lightly greasing the pan in between each crepe (blin).

After you get a whole big stack you can choose your topping - whipped cream, Nutella, bananas, strawberries, condensed milk, cheese, smoked salmon. Be careful though, they are addicting!!! Especially since they are so easy to make.

  1. This looks so good! I had no idea blinis were this easy to make either!! I'm sure mine won't look as pretty as yours though lol! I tend to break yolks and break pancakes. :p
